Serge Villomet and Olivier Weber, aided by 12 helpers, strung together the chain at the Comptoir de Payerne, an autumn commercial fair in the town 60 kilometres northeast of north of Lausanne.
Measuring 2,952.63 metres, it beat the previous record of 2,541 metres set by Italian butchers, the ATS news agency reported.
Te team started assembling the pork sausage chain on tables at 8.45am and finished at 3.30pm, ATS said.
The fabrication was overseen by a notary, surveyor and the local hygiene inspection service, Damien Corminboeuf, in charge of activities at the Comptotir de Payerne, told the news agency.
Around 18,000 of the 18-centimetre-long sausages were immediately put on sale.
Around a quarter of them have already found buyers with the rest to be sold during the week-long exposition.
The butchers are expecting to see the new record accepted by the Guinness Book of World Records.
